The initial struggle
I still remember the day I had to say goodbye to gluten. Coming from a place with a different bread tradition, I wasn’t a huge fan of the Dutch supermarket loaves, but letting go was still a big deal. For Bert, my partner and a passionate chef who loves pizza, pasta, and, of course, bread, it was even harder. Trying to find good gluten-free options felt like a bad scavenger hunt. Many were dry, crumbly, or just plain cardboard-like. I really missed the simple joy of biting into a warm, fresh piece of bread straight from the oven.
A chance encounter
After months of gluten-free living and trying many bread alternatives, I decided that for a healthy gluten free lifestyle, it was time to make my own bread. With Bert’s cooking experience and skills, we were determined to create something tasty and wholesome. The first attempts, though, were quite the comedy show. We struggled to find balance and taste while using a bunch of unnecessary ingredients like yeast, sugar, oil, and xanthan gum just to get a decent loaf!
Then, one Saturday morning, I visited a gluten-free sourdough bakery in Rotterdam. As soon as I walked in, the warm, tangy aroma surrounded me. The baker, Mark, explained how sourdough fermentation works; how wild yeast and lactic acid bacteria create that delicious tang and chewy texture. I was hooked! I realised I could make a healthier bread without all those extra additives.
Since adding gluten-free sourdough bread to my daily routine, I’ve noticed some great benefits. It boosts my energy and eases digestion while keeping my meals delicious and varied, making baking a rewarding experience.
